Philip Skaff, MS, RDN earned his Bachelor of Science in Biology with a minor in Art from Metropolitan State College of Denver in 1998. He later completed a Master of Science in Human Nutrition at Colorado State University in 2007 and went on to complete his Registered Dietitian Internship with the Department of Education in Tallahassee, Florida, in 2008.
Skaff joined the Department of Nutrition at MSU Denver in January 2009 and has since been dedicated to educating future nutrition professionals through engaging and applied learning experiences. He teaches Introduction to Nutrition (NUT 2040), Nutrition and Sports Performance (NUT 3200), Cultural Aspects of Nutrition (NUT 3300), and Global Nutrition (NUT 3350).
His areas of expertise include global and cultural nutrition, as well as sports nutrition. His current research examines the nutritional status of school-aged children participating in an integrated nutrition program in rural Tanzania, with a focus on comparing outcomes to national prevalence estimates. Through both his teaching and research, Skaff is committed to advancing nutrition education and promoting health in diverse populations.
