Dr. Jennifer Bolton earned her Ph.D. in Nutrition from Colorado State University, with a specialization in Maternal and Child Nutrition. She serves as faculty in both the undergraduate and graduate nutrition programs at Metropolitan State University of Denver (MSU Denver). Dr. Bolton is the founder and director of MSU Denver’s Pathway 2 Lactation Training Program, one of only eight accredited Pathway 2 programs in the United States.
An International Board Certified Lactation Consultant (IBCLC) and recognized expert in breastfeeding, Dr. Bolton has more than 25 years of experience as a pregnancy and pediatric dietitian. In 2026, she expanded her clinical practice to include nutrition counseling for perimenopause and menopause, providing evidence-based guidance to women throughout the lifespan.
Dr. Bolton teaches NUT 5150: Lifecycle Nutrition. Throughout her academic career, she has taught a wide range of undergraduate and graduate courses, including Introduction to Nutrition, Research Methods, Cultural Nutrition, Medical Nutrition Therapy, and other nutrition-focused subjects. Her current research and professional interests center on educating healthcare professionals to improve breastfeeding support and maternal-child health outcomes.
