Biography

My name is Jennifer Powell Bolton PhD, RDN. I am a Registered Dietitian with a PhD from Colorado State University. This is my 27th year teaching at MSU Denver.

I love hiking, skiing, cooking, and doing about anything outdoors with my family and friends.

I teach Lifecycle Nutrition in the Graduate Program and Maternal and Child Nutrition, Introduction to Nutrition, and Medical Nutrition Therapy I and II in the undergraduate program.

My research interests include prevention of neural tube defects in developing countries, breastfeeding support, and critical care nutrition.
