Eating healthy on a college budget is possible — especially when you take advantage of affordable pantry staples like beans, rice, canned vegetables, oats, and shelf-stable proteins.  

During our free nutrition counseling sessions, I’m often asked: “How can I eat healthy on a budget?” and “What are some easy, healthy meals I can make quick?” 

Building simple meals around pantry items helps stretch your money while still giving your body the nutrients it needs to stay energized, focused, and healthy. I often encourage students to prioritize fiber-rich foods like beans, whole grains, and vegetables to stay fuller longer.  

Adding low-cost protein sources, such as eggs, canned tuna, peanut butter, or lentils/beans, can also help support muscle recovery and overall well-being.  

With a few basic ingredients and a little creativity, you can make balanced meals while saving money. 

Easy, Healthy & Pantry Friendly Inspo:

  1. Chickpea & Veggie Rice Bowl: Mix cooked rice with canned chickpeas, vegetables, and a splash of olive oil and lemon.  Add spices like garlic or chili powder for extra flavor.
  2. Chipotle-style Burrito Bowl: Mix cooked rice with canned black beans, add tomatoes, salsa, cheese and toppings of  your choice!
  3. Tuna & White Bean Salad: Combine canned tuna, white beans, a squeeze of lemon (or vinegar packet), black  pepper, and any chopped veggies you have. Great as a wrap or on whole-grain  crackers.
  4. Peanut Butter Banana Oatmeal: Cook oats with water or milk; stir in peanut butter, sliced banana, and cinnamon. High- energy breakfast that costs less than $1.
  5. Lentil Soup: Simmer canned or dry lentils with broth (or water and bouillon), canned tomatoes, and  frozen or fresh veggies. Makes multiple servings for a few dollars.
  6. Veggie Quesadilla: Spread canned beans on a tortilla, top with any veggies and a sprinkle of cheese, and  heat in a pan until crispy. Serve with salsa for a complete meal.

These meals rely on inexpensive, shelf-stable ingredients that many college food pantries carry, making nutritious eating more accessible—even on the tightest budget.
