Jon Padia, MS, RD

Jon Padia is a Denver native and has been a Registered Dietitian since 2014. Jon received his Bachelor of Science degree in dietetics from Metropolitan State University of Denver in 2013 and his Masters of Science degree in food science and nutrition from Colorado State University in 2018. Jon has a strong background in community nutrition working as a dietitian for a local school district, the WIC program, and the Colorado Department of Education where he served as the lead for menu planning in school nutrition programs. He began his recent role as a Professional Research Associate in 2020 for the University of Colorado, Clinical and Translational Research Center. Within this role, Jon serves on the nutrition core where he plans research diets and acts as nutrition liaison for research studies that focus on nutrition.

Melissa Fuster, PhD

Melissa Fuster is Associate Professor of Public Health Nutrition at Tulane University School of Public Health and Tropical Medicine. Her research applies a multidisciplinary and intersectional approach to examine underlying social determinants of diet-related health inequities, with a focus on Latin American communities and their diaspora communities. The work was featured in her book, Caribeños at the Table: How Migration, Health, and Race Intersect in New York City (University of North Carolina Press). Building on this work, Dr. Fuster is currently tackling food access issues via the Latin American Restaurants in Action (LARiA) Project, collaborating with restaurants to facilitate healthier eating. She completed her Ph.D. in Food Policy and Applied Nutrition at the Tufts University Friedman School of Nutrition Science and Policy, and a post-doctoral fellowship in food studies at New York University. Before joining the faculty at Tulane, she was an Assistant Professor at the City University of New York Brooklyn College.

Sangeeta Shrivastava, PhD, RDN, FAND

Sangeeta is the owner of an insurance-based private practice Dr. Sangeeta Nutrition. She also works as part-time faculty at California State Polytechnic University Pomona, CA, and is a Clinical Dietitian in a subacute setting. She holds a Ph.D. in Nutritional Biochemistry.  She practiced as a dietitian in India for 7 years before moving to the United States. She went back to school to become RDN here in the United States. Nutrition and Dietetics are not only her profession but her true passion where she visualizes to empower each person about a healthy lifestyle to reduce the burden of health disparities in the community. As a clinical dietitian, she strongly believes that if nutrition is at the forefront of the care, the cost of health care, length of hospital stay, and rate of readmission will significantly be reduced.  Sangeeta is the winner of the Emerging Dietetic Leader Award in CA in 2018, she also earned AIND: MIG Star Award during FNCE® in Washington DC. Sangeeta was named Outstanding Faculty by CPP athletic department based on her student nomination in 2019. Sangeeta has co-authored a chapter on Ayurveda in a functional medicine textbook.  She is the Chair of IND MIG and CA coordinator for DIFM DPG. She is an immediate past member of the nominating committee of CA Academy. She also served as president of the California Academy- Orange District 2013-2016.  She lives in Southern California with her husband and 2 sons. Kate Schulz, RD, LD, LMNT

Kate Schulz RDN, LD, LMNT, is the consulting dietitian for the Colorado Beef Council. Kate is a graduate of the University of Wyoming and completed her dietetic internship at Utah State University. Kate has worked as a consulting dietitian for the last ten years; her previous clients include the Wyoming Department of Health, The University of Wyoming, DaVita Dialysis, Heritage Health Care Center, the Cent$ible Nutrition Program, along with numerous senior meal and meals on wheels programs. Kate serves as the President-Elect for the Northern Colorado Dietetic Association and has served as the Treasurer, Public Policy Coordinator, State Policy Representative, Licensure Chair, and Licensure Liaison for the Wyoming Academy of Nutrition and Dietetics. Kate previously was awarded Recognized Young Dietitian of the Year, Emerging Dietetic Leader, and Outstanding Dietitian of the Year by the Wyoming Academy of Nutrition and Dietetics. Kate currently serves on the Wyoming Dietetics Licensing Board, a position appointed by the governor.

Luis Gonzalez, MS, RDN is an Account Coordinator at Eat Well Global, a highly specialized strategic communication consultancy on a mission to empower global change agents in food and nutrition. Prior to this role, Luis spent years working in the areas of clinical nutrition and food service management. Luis is also the owner of LG Photography, LLC where he combines his passion for nutrition and photography to showcase the natural beauty of food. Luis received his undergraduate and graduate degrees in Nutrition and Dietetics from Florida International University, and completed a Graduate Certificate in Food Writing and Photography from the University of South Florida, St. Petersburg.  Luis is active in the profession and is the current Chair-Elect of the Latinos and Hispanics in Nutrition and Dietetics MIG, as well as a member of Cultures of Gender and Age, Food and Culinary Professionals, and Nutrition Entrepreneurs.

Monica Moreno, MS, RDN

Monica Auslander Moreno, MS, RDN is the founder of Essence Nutrition, a group practice of ten registered dietitians, and oversees all of Essence’s private client work while focusing on Essence’s corporate wellness programming, speaking engagements, non-private client nutrition consulting services, school wellness programming, and marketing. She is the dietitian for the Miami Marlins and is the visiting dietitian specialist at Ocean Reef Resort and Club. She maintains membership within the Academy of Nutrition and Dietetics, Nutrition Entrepreneurs Dietetics Practice Group, Integrative Nutrition Dietetics Practice Group, Collegiate and Professionals Sports Dietitians Association, and Weight Management Dietetic Practice Group. She has been a member of the Junior League of Miami since 2011, serves on the advisory board of Thrive Performance Arts Enrichment Program, Teen Health 101, is the Diversity Liaison for the Florida Academy of Nutrition and Dietetics, and is a past co-chair and current board member of Jewish Community Services of South Florida’s Young Alliance.
