Department of Nutrition
The Department of Nutrition was well represented at the Colorado Academy of Nutrition & Dietetics annual meeting in Keystone, CO on Friday, May 4, 2018. MSU Denver Department of Nutrition faculty, alumni and students dominated the awards and our esteemed faculty and students gave presentations and poster sessions which were well received by attendees from across the state.

Nutrition majors and Community Nutrition (NUT 4210) students, Hope Moore, Stephanie Urretia and Sharon Tanaka are shown in the photo along with their professor, Dr. Rachel Sinley (3rd from left) at the “Baby Shower” event they organized for Metro Caring on November 13 and 14. Metro Caring is Denver’s frontline hunger-prevention organization that meets the community’s immediate needs for nutritious food while also sustainably addressing the root causes of hunger and poverty. The goal of this event was to distribute materials related to healthy pregnancies and to conduct a needs assessment to ascertain participant knowledge related to gestational diabetes, diagnosis of gestational diabetes, and potential need for nutrition education programming at Metro Caring tailored for this population. This event was organized and staffed on a volunteer basis and was not required for course credit. MSU Denver Human Nutrition & Dietetics majors are rock stars in the volunteer arena and have established partnerships/collaborations with many organizations in the Denver metro area.
Bruce Rengers was featured in MSU Denver’s Insider article about his service-learning class on community nutrition. Dr. Rengers received a $500.00 grant from MSU Denver’s Applied Learning Center to support development of his service learning class. After an initial pilot, he and students looked at the nutritional quality of the food distributed by Metro Caring. Dr. Rengers was able to purchase scales to weigh donated food and incentivize clients to record the food they selected at the agency. Data were recorded and revealing that participants were not getting enough calcium from the food they were choosing. This research led to the agency prioritizing partnership-building with milk producers to address the gap in needs. Students are able to gain invaluable opportunities to participate in clinical, community and food service internships while Metro Caring gets information and ways to put new solutions into action. Associate Professor Melissa Masters has also been a part of this project, helping students evaluate and analyze instruction offered by Metro Caring. Students were able to develop a needs assessment for gestational diabetes and interviewing children and caregivers to develop educational material in both English and Spanish. They were also able to teach participants nutritional value and new ways to prepare foods which they may be unfamiliar with.
Jerry Foote was invited to present "Evaluating Dietary Supplements" at the Special Operations Forces Performance Nutrition Summit in Ft Braff, North Carolina. Dr. Foote presented practical recommendations as well as information from his research including a database of adverse events associated with botanical dietary supplements that can be used as a tool to help practitioners predict and or avoid future adverse events. At the conference were representatives from the Special Operations Command for the US Army, The US Air Force, The US Marine Corp Forces and the Naval Special Warfare Command.
Stephanie Wiese was featured on 9News to talk about healthy eating, “even when you’re a poor college student”. She advised college students on healthy grab and go options that are affordable and help with hunger cravings.
Skylar Furness, an MSU Denver ISPP intern received the 2016-2017 Colorado Academy of Nutrition and Dietetics (CAND) ISPP Program Outstanding Dietetic Student of the Year Award at the CAND 2017 Annual Nutrition Conference & Exhibition.
Loretta Pokorny, an HND senior will be presenting "The Connection Between the WELL Building Standard (WELL) and Health Care Costs" at the Rocky Mountain Green 2017 Conference on April 27, 2017.
