Bio

A native of Cali, Colombia, Paula Gonzalez-Thomas has gathered experience and wisdom from every stage of the food system and every corner of the kitchen. Paula also teaches at the School of Hospitality at Metropolitan State University of Denver and is a board member of the Denver Sustainability Food Policy Council. As a mentor, she seeks to help the next generation of restaurant leaders put sustainability first.

Research Interests

- The role of the hospitality industry in the environmental crisis and possible solutions toward change
- Ecology and food production for restaurants and food outlets
- Food Policy & Structural Racism
- Trade Policies & the effects on rural and indigenous communities
- Indigenous Foodways and their positive impact on biodiversity

Teaching Interests

I'm interested in the connection between hospitality and sustainability. From environmental to social and financial sustainability, especially important as we see a need for the industry to reshape its focus toward being a leader in developing solutions to the climate crisis, biodiversity loss, and social injustice.
My focus is on:

Food Culture and the value of diversity
