Personal Biography Statement

I arrived in Denver May 2008 to start my new job as Professor in the Health Professions Department at Metro State. Prior to my arrival, I was a Professor at Missouri State University.

I received my Bachelor's degree in Dietetics from Texas Christian University in Forth Worth, TX, my Master's in Nutrition from Colorado State University, and my Doctorate in Nutrition from Texas Woman's University. I am a registered dietitian (RD) and have worked as a clincial dietitian in a hospital, nutrition counselor, and consulting dietitian. I worked as the education director for an internet startup company (, but a few months after taking the job, the company folded when the industry crashed in 2000. I have published nutrition articles for the public, mostly on websites, and edited Bob Greene's book on eating healthy when dining out. I've been on the Oprah show twice as a guest in 2007, and worked with two people the show was following for weight loss that year.

I have published research, mostly on body composition and obesity, but most recently on the treatment of people with dysphagia (swallowing disorders)and cultural competetency in such journals as Topics in Clinical Nutrition, Journal of the American Dietetic Association, and Journal of Clinical Endocrinology and Metabolism.
